Caprese Salad

As the weather warms, I get excited about the crop of tomatoes and fresh basil that will soon be available. One of the simplest salads I prepare all summer long is a Caprese Salad. With just a few ingredients it’s a cinch to whip up and a healthy dinner option on a hot summer evening!

Ingredients 

  • 3 large, ripe tomatoes
  • Basil leaves
  • Fresh mozzarella cheese
  • Your favorite Extra Virgin Olive Oil
  • Salt and pepper to taste
  • Balsamic glaze (optional)

Instructions

  • On a serving plate layer the slices of tomatoes, mozzarella, and basil.
  • Sprinkle with salt and drizzle with olive oil.
  • Add any extra torn basil leaves on top.
  • For added flavor, drizzle balsamic glaze on the top.
  • Serve with a slice of crusty bread and glass of wine!

 

For a fun twist on this dish, you can make Caprese Skewers with cherry tomatoes, small mozzarella balls, and basil leaves. Or you can combine the cherry tomatoes, mozzarella balls, basil, extra virgin olive oil, salt, and minced garlic (optional) in a large bowl, for a more traditional salad.
